WThis is a home-style version of a beverage from a new cocktail list. This is a party-sized prepared mix which is loaded full of tastes of the Christmas time, making it excellent for your holiday party. Any leftover citrus syrup you can use for morning drinks, desserts, or to mix more rounds of this cocktail.

For the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Combine every items in a pot, heat until it reaches a simmer, stirring until the sugar dissolves. After that, turn off the heat and let it to reach room temperature completely. Decant into an sealable bottle, cap it and refrigerate it chilled, where it will keep for up to one month.
For the Cocktail Base: Pour all the liquid ingredients into a sizeable container, leave to sit for one hour, then pass it through , ideally through muslin, to ensure it's perfectly clear.
To serve: Add 85ml of your cocktail base to a stirring glass packed with ice, and agitate lightly for a minute until cold. Pour into an cold coupe glass or a similar vessel, decorate with the cranberries and complete it by giving it a quick spritz with the mandarin essence over the drink.
